One Pot Pasta

Ingredients for 2 servings
Ingredients
  • -10 2 tbsp olive oil
  • -9 ½ red onion, diced
  • -8 1 garlic clove, crushed
  • -7 ½ red pepper, sliced
  • -6 ½ green pepper, sliced
  • -5 ½ small courgette, sliced
  • -4 6 green beans cut into 3
  • -3 300 ml water
  • -2 150 ml tomato pasta sauce
  • -1 ½ tsp dried oregano
  • 0 ½ tsp crushed chilli flakes (optional)
  • 1 160 g Mevalia LP Fusilli
  • 2 chopped fresh herbs for garnish (optional)
  • 3 salt & pepper
Preparation
  1. Heat the oil in a large frying pan before adding the onions and garlic, stir-fry on a medium to high heat for 2 minutes. 
  2. Add the peppers, courgettes and beans to the onions and garlic, stir-fry for a further 1 minute.
  3. Add the water, pasta sauce, oregano and chilli flakes if using, mix well, before adding the Mevalia LP Fusilli.
  4. Bring to the boil, then reduce the heat to medium-low and cook the pasta for 10-12 minutes.
  5. Stir the mixture regularly to stop it from sticking to the bottom of the pan.
  6. To finish, season to taste and sprinkle with herbs of your choice.
