Pasta with Creamy Sweet Potato Sauce

Ingredients for 2 servings
Ingredients
  • 0 1 medium sized sweet potato
  • 0 100 g Mevalia LP Penne
  • 0 50 ml water (from cooked Penne)
  • 0 10 g butter
  • 0 1 garlic clove, crushed
  • 0 30 ml Mevalia LP Lattis
  • 0 ¼ tsp salt
  • 0 ¼ tsp ground black pepper
  • 0 15 g low protein cheese, grated
  • 0 2 tbsp freshly chopped flat parsley
Preparation
  1. Cook the sweet potato in the microwave for 10-12 minutes.
  2. Meanwhile, bring a saucepan of salted water to the boil, cook the Mevalia LP Penne for 5-7 minutes.
  3. Once the Mevalia LP Penne is cooked, drain and set aside, reserving 50 ml of the pasta water for the sauce. 
  4. Once the sweet potato is cooked, cut in half (be careful as it’s hot), spoon out the pulp and transfer to a bowl.
  5. Add the butter, garlic, Mevalia LP Lattis, salt & pepper to the sweet potato, whisk until smooth. Add the Mevalia LP Penne and sweet potato into the pan and bring to a gentle simmer, reduce the sauce to the desired consistency.
  6. Finish with the grated cheese and freshly chopped herbs. 

Recipe tips; if the sauce is too thick add a little more Mevalia LP Lattis.
