ITALIAN SWEET POTATOES

Ingredients
  • 0 olive oil 50 ml
  • 0 Sweet potatoes peeled and diced 500 g
  • 0 garlic, finely chopped 2 cloves
  • 0 sea salt 1 tbsp
  • 0 fresh rosemary 1 sprig
  • 0 fresh oregano 1 sprig
  • 0 fresh thyme 1 sprig
Preparation
4 x portions

Heat the olive oil in a suitable roasting tin then add them diced sweet  potatoes and cook, stirring occasionally until the potatoes start to soften and begin to lightly stick to the bottom of the pan - about 8-10 minutes.

Add the garlic, sea salt and fresh herbs and cook gently for a minute.

Stir in the canned tomatoes. 

Reduce the heat to medium, cover and cook gently for about 20 minutes, stirring occasionally. 

To finish add freshly snipped chives.
