
ITALIAN SWEET POTATOES

Heat the olive oil in a suitable roasting tin then add them diced sweet potatoes and cook, stirring occasionally until the potatoes start to soften and begin to lightly stick to the bottom of the pan - about 8-10 minutes.
Add the garlic, sea salt and fresh herbs and cook gently for a minute.
Stir in the canned tomatoes.
Reduce the heat to medium, cover and cook gently for about 20 minutes, stirring occasionally.
To finish add freshly snipped chives.
