
BLUEBERRY & MANGO MUFFINS
Preparation
12 muffins
Place the Mevalia bread mix into a mixing bowl then mix the light brown soft sugar and syrup with the baking powder.
Add the soft margarine and the orange or apple juice, and using a wire whisk mix quickly for 1 minute until smooth and well mixed.
Stir in the blueberries & mango, coating with a little bread mix first (this will stop them from sinking when baking)
Divide the mixture between 12 muffin paper cases set inside a muffin tin.
Bake in a preheated oven 200c for 25-30 minutes until risen and golden brown.
Place on a rack to cool.
The muffins are perfect for freezing..
