Chocolate & Banana Loaf

Ingredients
  • 150 g Mevalia LP Bread Mix
  • 1tsp LP egg replacer
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 140 ripe banana
  • 50 ml MEVALIA Lattis/ ProZero
  • 50 g caster sugar
  • 50 g MEVALIA Chocotino/ Vitabite, broken into small pieces
  • For the topping:
  • 50 g Mevalia LP Chocotino
Preparation
  1. Preheat an oven to 180°C/ 160°C fan/ gas mark 4.
  2. Line a 2lb loaf tin with greaseproof paper and set aside. 
  3. Place the Mevalia LP Bread Mix, LP egg replacer, baking powder and baking soda into a medium sized mixing bowl, mix well. 
  4. In a food processor or blender, blitz the banana, MEVALIA Lattis/ ProZero and sugar until smooth.
  5. Combine the two mixtures and beat into a smooth firm batter before adding the MEVALIA Chocotino/ Vitabite pieces, mix until fully combined. 
  6. Pour the batter into the loaf tin and level with the back of a wet spoon.
  7. Bake for 50-60 minutes until a skewer inserted into the middle comes out clean.
  8. Once the loaf is cool, melt the remaining MEVALIA Chocotino/ Vitabite in the microwave for 1-2 minutes before drizzling over the top. Allow to set before serving.

Recipe tips; this banana loaf is suitable for freezing. Place in an airtight container before freezing and use within 3 months.
