Chewy Chocolate Cookies

Ingredients
  • 50 g granulated sugar
  • 80 g brown sugar
  • ½ tsp salt
  • 60 g melted butter
  • 5 g LP Egg Replacer
  • 1 tsp vanilla bean paste
  • 190 g Mevalia LP Bread Mix
  • ½ tsp baking soda
  • 40 ml Mevalia LP Lattis
  • 90 g Mevalia LP Chocotino, broken into small pieces
Preparation

Recipe for 12 portions 

  1. In a large bowl, whisk together the sugars, salt and butter into a smooth paste.
  2. Whisk in the LP Egg Replacer and vanilla bean paste.
  3. Sift in the Mevalia LP Bread Mix and baking soda, beat the mixture with a wooden spoon, slowly adding the Mevalia LP Lattis as you continue to mix.
  4. Fold in the Mevalia LP Chocotino, chill the dough for at least 1 hour. The longer you leave in the fridge the better the cookie will taste (maximum 48 hours). 
  5. Preheat the oven to 180°C /160°C fan /gas mark 3. Line a baking tray with parchment paper.
  6. Scoop the dough onto the parchment, leaving at least 10cm of space between each of the 12 cookies and 5 cm of space from the edges of the tray so that the cookies can spread evenly.
  7. Bake for 15-20 minutes, or until the edges have just started to brown.
  8. Whilst the cookies are hot you can reshape them if uneven.
  9. Leave to cool before eating. Store in an airtight container.
