Yeast Cake

Ingredients
  • LP Egg Replacer 15 g
  • water 60 ml
  • custard powder, original 15 g
  • salt 2
  • apple vinegar 1 tsp
  • Food Heaven, Heavenly Whipped Cream 30 g
  • cinnamon 2 g
  • vanilla paste 5 g
  • MEVALIA Lattis/ ProZero 250 ml
  • fresh yeast 15 g
  • melted butter 80 g
  • MEVALIA Bread Mix 500 g
  • MEVALIA Bread Mix 60 g
Preparation

Mix LP Egg Replacer with water. Add the custard powder and it mix well. Next, combine the salt, apple vinegar, whipped cream, cinnamon, sugar and vanilla paste and stir until the sugar has dissolved. Heat the MEVALIA Lattis/ ProZero (be careful not to overheat) and dissolve the yeast in it and add it to the rest. Pour in the melted butter. Gradually, add 500 g MEVALIA Bread Mix and knead well together with a hand mixer (dough hook). Finally, add the remaining MEVALIA Bread Mix and knead into a dough with your hands. Divide the dough into 3 equal parts (approx. 380 g) and roll them all out into a roll approx. 4 cm thick. Start from the middle and braid downwards. Turn the dough over and at the same time braid the other half. Cover the bottom of a backing mould with baking paper, shape the braided dough into a wreath, and place it in the mould. Tie the ends together. Cover airtight with cling film and leave to rise in a warm place for at least 60 minutes. Bake at 180° C. After baking, cover the yeast wreath with a damp cloth and leave to cool.
