RATATOUILLE

Ingredients
  • virgin olive oil 2 tbsp
  • red onion, peeled and diced 1 large
  • red pepper, deseeded and cut into cubes 1
  • green pepper, deseeded and cut into cubes 1
  • cloves garlic, crushed 2
  • medium courgettes, sliced 2
  • medium aubergine, diced 1
  • can tomatoes 400 g
  • Sea salt and freshly ground black pepper
  • chopped fresh parsley 3 tbsp
Preparation
Makes 4 servings

Preparation time: 20 minutes Cooking time: 20-25 minutes

Heat the oil in a large saucepan, add the onions, garlic and peppers and cook gently for 5 minutes.

Add the courgettes, aubergines and tomatoes. Stir then cover and cook over a low heat for 20–25 minutes until the vegetables are tender.

Season to taste with salt and pepper. Stir in the chopped parsley.

Serve hot with Mevalia Penne
