QUICK THAI CURRY JACKFRUIT AND MEVALIA RICE

Ingredients
  • 0 MEVALIA rice 160 g
  • 0 water 2l
  • 0 Juice and zest of a lime
  • 0 Olive oil
  • 0 Upton’s Thai curry jackfruit 1 packet
  • 0 Shallot finely diced
  • 0 chilli finely diced
  • 0 Coriander leaves to garnish (optional)
Preparation
serves 2

Place rice in a pan with 2 litres of water along with the zest and juice of a lime and boil for 9-11 minutes.

Heat the oil in a pan, add the jackfruit with the remaining ingredients and cook for 8-10 minutes, stirring regularly. Adding a splash of water if it starts to stick.

Drain the rice and serve with the curry. Garnish with the coriander leaves.
